Coffee & Walnut Cupcakes

Today I wanted to share this cupcake recipe that I found and its amazing! Need to try!


I'm sorry that I don't have any pictures from the process of making, I was just trying those out and they turned out amazing, I could not share them with you.
The cupcakes have quite strong taste of coffee, if you are not a huge fan of strong coffee you may want to add less or add more if you like it stronger.

Cupcake Ingredients  (12 cupcakes)


  • 2 tsp instant coffee granules
  • 115 g (4 oz) baking butter (room temperature)
  • 115 g (4 oz) caster sugar
  • 115 g (4 oz) self-raising flower 
  • 1 tsp baking soda
  • 2 large eggs
  • 45 g (1 1/2 oz) walnut halves, finely chopped
Icing

  • 2 tsp instant coffee granules
  • 350 g (12 oz) icing sugar
  • 175 g (6 oz) butter (room temperature)
  • walnuts for decoration

1.  Preheat the over to 180*C/ gas 4. Line the bun tin with a paper case.
Stir the coffee with 2 table spoons of boiling water in a small bowl until the granules have dissolved. Set aside to cool.

2.  Place the butter, caster sugar, flour and baking powder in a large bowl. add the eggs and the cooled coffee mixture and beat well until smooth. Stir in the walnuts. divide the mixture equally among the paper cases. Bake for 15-20 minutes or until well risen and firm on top. Remove the cakes from the tin and leave to cool down.

3.   Make the icing: Stir the coffee with 2 table spoons of boiling water in a small bowl until the granules have dissolved. Set aside to cool. Sift the icing sugar into a large bowl, add the butter and the coffee mixture and beat until smooth and well blended.

4.  Pipe the icing onto the cupcakes, add some walnuts on top.
